Cream Cheese and Apple Pudding

Ingredients:

  • 3 Cups milk
  • ½ Cup cream cheese
  • ½ Cup applesauce
  • ¼ Cup cornstarch
  • 3 Egg yolks
  • 1 Tsp vanilla
  • ½ Tsp ground cinnamon
  • ½ Tsp ground nutmeg

For the topping:

  • Cream cheese frosting
  • Ground cinnamon

Directions:
In a saucepan over medium heat, mix the milk, egg yolks, applesauce, and cream cheese and stir for 5 minutes.
Add the cornstarch, vanilla, nutmeg, cinnamon. Stir until the first bubble forms (around 10 minutes).
Remove the saucepan from the heat and let it cool down.
Transfer to a bowl and refrigerate for 3 hours.
Pour the pudding into tall glasses and top with the frosting and cinnamon.
Serve and enjoy.

Tips
Add some hazelnut spread if you are feeling extra indulgent.

Banana Dolphins Snack for Kids

I found these banana dolphin snacks for kids on Pinterest (couldn’t find the original source) and they are ADORABLE! All you need to do is cut a banana in half, then cut a slit on the stem to make a “mouth.” Stick a blueberry in its mouth and put it inside a plastic cup filled with blueberries, grapes, etc.

Or you can do this idea and put cute goldfish crackers inside the dolphins mouth!

Homemade “Cheez-it” Crackers

Instead of buying cheez-it crackers at the store full of salt and carbs…make your own at home! Healthier and a delicious snack. Photos and recipe by Connie Sutton.

Supplies Needed:

  • Ultra thin cheese slices (any kind)
  • Parchment paper
  • Knife

Start by cutting the pieces of cheese into 4 and placing them on parchment paper. Bake in the oven for 35 minutes at 250 degrees F (times vary depending on oven).

Tropical Smoothie Recipe

Serves: 5 (depending on height and amount poured into drink ware)

Here’s a yummy tropical smoothie to make this summer to cool off! You could make it for breakfast, a snack, or a fun drink at a party!

Ingredients:

  • ½ cup of cream of coconut
  • 2 cups of pineapple juice
  • 16 oz frozen pineapple chunks
  • 10 oz frozen strawberries
  • Shredded coconut flakes, fresh strawberries an pineapple (optional for garnish)

Instructions:

In a blender combine all ingredients in order as listed and blend until incorporated. Pour into glasses or cups and enjoy with suggested garnishments.

Blueberry Honey Yogurt Popsicles

Here’s a delicious popsicle recipe for you guys to make this summer! Blueberry honey yogurt flavored!

Ingredients:

  • 2 ¼ cups of fresh organic blueberries
  • 1 tbsp fresh lemon juice
  • 2 tbsp organic honey
  • 2 cups of Greek flavored yogurt of choice (I love the honey and or vanilla)
  • 6 popsicle molds

Instructions:

In a blender add all of the blueberries and lemon juice and pulse until you get a smoothie consistency (don’t be afraid if this is thick and unappealing). In a large bowl, pour the blueberry mixture into the bowl and mix with honey. Next, gently mix in the yogurt to give it more of a swirl effect don’t over mix and leave some of the yogurt exposed.

Pour the mixture carefully into the clean Popsicle molds and insert a stick if comes with them otherwise if going old school freeze the batch for 2 hours and then insert a wooden popsicle stick in the middle. Freeze the batch for 4-6 hours but overnight is preferred. Before eating, run warm water over the molds for easily release.

*Try this recipe with other flavors besides blueberries like strawberries (hulled and stems removed), cherries (pitted and stems removed) and or peaches (skinned and seed removed) to name a few.

Apple Crab Snacks for Kids

I found these cute apple crabs made by Mariah! Just cut half an apple then slice the other piece for the crab legs (you will probably need another apple) Then stick two mini chocolate chips into the apple for the eyes! So cute and easy to surprise the kids.

Healthy Sea Turtle Snacks for Kids

Found this adorable idea on Pinterest with no source and had to share! These would be fun to make for the kids during an ocean theme unit or just for fun!

Ingredients:

  • Green apples
  • Green grapes
  • Goldfish crackers
  • Mini chocolate chips
  • Frosting

Slice a green apple in half as well as grapes then lay them on a plate. Put dots of frosting and attach the chocolate chips to a whole grape for the turtles head. Make a little grape tail and cover plate with goldfish.
